Serge Mathieu is a small Champagne house from the Aube region, about a hundred kilometers south of Reims. Isabelle Mathieu (the daughter) and Michel Jacob work together to produce these beautiful champagnes. Quality is paramount. Harvesting is done manually, allowing for a very strict selection process, and the grapes are then carefully pressed pneumatically. There is no cold settling; fermentation takes place under controlled temperatures.
