On the sandy clay soils of the Sologne, outside the village of Oisly, Dominique and Véronique Barbou grow their Sauvignon Blanc from vines aged 13 to 43 years old. No chemical fertilizers, exclusively organic fertilization, and a strictly limited yield through disbudding. The wine ferments for a month on indigenous yeasts between 16 and 18°C and then matures on the fine lees until spring. The result is a fresh, fruit-forward Touraine Sauvignon of elegant class.

Outside the village of Oisly in Touraine (Sologne), Dominique and Véronique Barbou cultivate 23 hectares of vineyards. They are the fourth generation of the Barbou family involved in viticulture – it began in 1923 when Fabel Barbou purchased his first plot. The family works as sustainably as possible: no chemical fertilizers, exclusively organic fertilization, and a strictly limited yield through disbudding. The wines of the Barbou family are of high quality every year and are highly sought after.
