Estate information:
The Languedoc region in Southern France has produced many talented and innovative winemakers. Bernard Paillet of Château Régismont is one of them. He manages the family estate located between Poilhès and Nissan-lez-Enserune, near Carcassonne. The vineyards of Régismont are ideally situated, higher up in a relatively cool environment where it cools down significantly at night. Ideal for photosynthesis and excellent conditions for making white wine, which is not always the case in the Languedoc.
