The Languedoc region in southern France has produced many talented and innovative winemakers. Bernard Paillet of Château Régismont is one of them. He heads the family estate located between Poilhès and Nissan-lez-Enserune, near Carcassonne. The Régismont vineyards are ideally situated, somewhat higher up in a relatively cool area where it cools down considerably at night. This creates ideal conditions for photosynthesis and excellent conditions for producing white wine, which is not always the case in the Languedoc.
